Another part of the problem is that symbols typically are font specific and in Project a filed can only have one font. That menas it's easy to have a symbol in a field, but not easy to mix text and symbols unless the symbol happens to be part of teh same font as the rest of the field.

Try to copy/paste from other applications such as Excel.

Well I m not sure if I understood the question right, but you cannot insert Symbols into project which gets directly visible; but you can insert symbols in NOTE field of a task. It provides mechanim to insert objects - PPT/GIF/DOC etc as an artifact against a task.

A quick way to bring up the character map to use is:
From the start menu, RUN "charmap"
OK
SELECT the character(s) you want.
COPY
then switch to Project and PASTE where you want them.
Or you could just use MS Word of course. :-)
