Hi there, apologies if this is a silly question - but would i be right in thinking that if i use CSS Friendly controls to output the Controls, then i can use CSS to style the control rather than Skins?

Yes, that is true.  Skins are just a way to abstract some of the details of CSS and HTML.  For example, if you skin a datagrid, you don't need to know that a DataRow is actually an html <tr> with one or more <td>s.  You can just put a skin on a row and the details will be worked out in the background.
