Which method should I use

Hello,

would Sharepoint 2010 suit this type of work:

In my organisation we prepare quite a lot of proposal (ms word). These documents have one author but several contributers who work on the document, sometimes seperatly, sometimes together. The main author needs to have control of the document at all times. Is there a template that would enable this type of work or would it require some customization?

SharePoint 2010 is indeed a great document management system and it will suit your above needs. Here is an excellent ECM team blog post on what is new with SharePoint 2010 Document Management.

If you are looking for multiple people editing the same document, then you need to have Office 2010 as Co-Authoring is supported only in Office 2010.
