Is there a guide to converting Windows Phone 8 apps to UWP for Windows 10 phone? I have a lots of questions I need answered:
Where is the conversion guide? How is a WP8 app in the store actually upgraded to UWP? What is the user experience? Is it even possible. For example, can I submit an update package for my WP8 app with a package that is UWP only? Will windows store accept it? If it does accept it, does this mean users who have the WP8 app on their phone will not be able to upgrade if they don't have a Windows 10 phone? Will it play nice and not break anything? Will windows store be smart and not let me break anything for the WP8 users?

Yes there is a guide for converting and porting Windows Phone 8 apps to UWP. This guide of Porting apps to Windows 10 is comprehensive.
Also you have this guide on how to Move Windows runtime 8.x to UWP which includes details documentation on how port the project and then porting the XAML and UI and troubleshooting it.
Regarding your questions:
How is a WP8 app in the store actually upgraded to UWP? the 8.1 apps are forward compatible and you will find it in the store. to deploy a UWP app you need to deploy a new package.
