Why not to always use nvarchar(MAX) RRS feed

  • i have two questions regarding nvarchar(max):-

    1. i know that nvarchar(max) allows to store as many bytes as needed , so why not to use it always?

    2. incase i have a field that contains for example only 10 bytes for the nvarchar field, then will the database allocated for the nvarchat (max) only be dynamically allocated to the field size (in this case 10 bytes) OR i will be allocating unnecessary free space?.
