You can also use Conditional Formatting in 2007, but in 2007 you have to replace the existing listview web part with a dataview web part. The XML based listview doesn't come along until 2010. Here's an article on how to do it in 2007.

If you want to do it based on the values in the columns you could use conditional formatting. The following article has some examples of how to implement conditional formatting.

Thanks Paul,
I'm actually using Sharepoint Server 2007. Probably would've helped had I said that earlier huh? That being said, I couldn't apply the conditional formatting as described in the Article nor could I discern a workaround yet either. I'll keep trying, there's gotta be a way.
