Can I check that OPTIONS method is required to support CORS and Preflight request if I have other endpoints?

I do not understand your question.  The browser sends an OPTIONS header, as part of the CORS protocol, when making an a request other than GET to another domain.  This only applies to JavaScript applications.

Are you having a problem handling the OPTIONS header on your server application?  Is so, what kind of application are you building?  What framework are you targeting?  Can you share your code?

Seems you are looking for https://developer.mozilla.org/en-US/docs/Web/HTTP/CORS#simple_requests to understand which requests are not preflighted? And so any request that doesn't meet all those criteria will be preflighted.

In short by design you are allowed to use core capabilities. Beyond that the client must ask first to the server which additional capability is allowed before sending the actual request (and will block if the server doesn't allow that).
