Hi,
You can find a lot of information you require in the Infrastructure Planning section of Technet
http://technet.microsoft.com/en-us/library/cc789337(office.12).aspx MOSS
http://technet.microsoft.com/en-us/library/cc789337.aspx 2010
This question should be moved to the 2010 forum if your question is not about MOSS.
However, unless you have specific requirements to use 2 SQL servers at this stage I can't see why you would need to when you only have 1 Sharepoint Server and therefore have to redundancy precautions.

Hi.. There is "no" best scenario for SharePoint because each Farm, each Architecture is different! For you're case I can say you to
- Use 1 server as APPLICATION server where SharePoint 2010 is turning
- Use 2 server as FRONT END server with LOAD BALANCING
- use 1 server for DATABASE server
Install SharePoint Server ( APP & FRONT END ) -> http://www.gokanozcifci.be/subsite/blog_config_KB24.html
Install SQL server -> http://www.gokanozcifci.be/subsite/blog_config_KB26.html
