Impact of Office migration on MOSS Level

Hi everyone,
I am now actually auditing a new project for my company but there was a strange question..
They want to migrate OFFICE 2003 to OFFICE 2010 .. nothing special, but my question is here..
We have a MOSS Server who has 1000 Pages, 500 Sites, 200 Site collections, ...
Millions of documents ( Word, Excel, ... ), Outlook mail alerts, workflows with documents etc ..
What can be the "impact" of this migration.. Will everything work as usal, or not? what do I have to change? ..

Thank you John,
But actualy this whitepaper is the difference between Office 2007 and Office 2010..
I'm actualy searching for something OFFICE 2003 VS OFFICE 2010 for MOSS 2007 ..

I doubt you will get a whitepaper on that, as 2003 is well out of date now and Microsoft wouldn't normally do a comparison between a current and a legacy version. I think your only other comparison paper of any use would be the Good, better Best paper from 2007 which does an comparison of client tools on SharePoint 2003 and 2007 versions.
