Project documents have lots of fancy names like artifacts, But try to keep documentation to a minimum because the content inside the documents is always subject to change. Really I think the bare minimum you can get away with is a UI mockup document and a test document. A good developer can run with a UI mockup without any written words at all (although they help), and your test plan can be slightly rewritten or used as is to be the end-user documentation. At a bare minimum this is what I do.

Work with the client to produce a UI mockup (When i click here this happens, when I put this value in that happens)

Break out work into 1 or two week iterations and demo your progress to the client each week or every two weeks.

    perform testing.

Really old fashioned people will discuss technology agnostic business requirements, but that line of thinking is sooo old fashioned I don't think it has merit in SP development.

BTW theres tons of documentation for SharePoint Development Methogologies and SDLC
