Document Management Solution

Hi, I am looking for a document management solution for an organisation.
The main Features that we require mainly are
-Version Control,
-Quick Search
-importing and exporting documents
-Sharing the documents
-remotely using documents from home using a VPN connection
-workflow
-archiving
-access control
-barcode identification
-document history
-checkin/checkout of document
-list of documents approved
-list of tasks assigned
-microsoft office integration
-lock documents
-link companies and persons to documents
approval notes
-projects collaboration
-automatic simple workflow
approval tasks in the dashboardIn order to attain these features which plan such a foundation, standard, or enterprise can attain these features.
At the same time will i be able to get a customized version of sharepoint where all the unneccassary features are driven out and only the main features are concentrated ?
I would also like to get a server based on-premises, so how is its implementation taken place with how many servers are needed for a small sized company?

This is a pretty broad question you've asked, I suggest you break it up a bit. However, to respond to this post... most of these features are available in all versions of SharePoint. I'm not sure what "barcode identification" means and "archiving" is a very general term.
What is "small"? It all depends on the hardware and usage, so it varies. Some people run SharePoint on one server, but recommended practice is to at least put SQL Server on a separate machine.
If you're planning to run on-premises, I suggest you grab the trial image and actually see what works for you and what doesn't. Then you can evaluate how to fill any holes you find--partner solutions, custom code, etc.

That's pretty sweeping... one person's "archiving" will differ enormously from another's requirements, and there are plenty of other examples in this list.
In my experience, the main issue with SharePoint deployments is that people just assume their particular needs will be met perfectly. No system will live up to those expectations.
