Question on workflow task process variable documentation and use

Hi all,
I've been searching for days to find some/any documentation around the OOB list of task process variables, their purpose/intent and origination (where in SharePoint do they get set if not in the workflow definition itself). I've found nothing. Does anyone know if this exists anywhere? Finding a flowchart representation of the default approval workflow process would also be great to have :-).
Specifically, I'm trying to figure out where Task Process:Item Title gets set. It's not a column in workflow tasks or workflow history. In my workflow, it consistently returns "(no title)" in any email message (sent to initiator for example) send.
Where in SharePoint do I give this variable a title if this is not a column in any list associated with my workflow?

Hi pgtaviator,
Task Process:Item Title will return the list item which you start the workflow from, and when the Title field of the list Item has no value, then it will display (no title) instead. If you want to get Tasks Title field, please use Current Task:Title.
