We have an E1 plan for Office365 and I have the following questions:
I understand we cannot create custom Site Definitions for SharePoint Online. What is recommended then? Site Template or Just use out of the box and modify the page as necessary everytime? Feature Stapling is not supported or does not come into picture then I assume. One less thing to worry abuot.
I do see an option for InfoPath Services. I do not see an option for Excel Services. Is Excel Services supported? How do I know clearly what is and what isnt supported in the Online version and any best practices guidance will be greatly helpful.

You'd want to use a web template, see
theres lots of different tables and diagrams about the differences between E1,E2,E3,E4

I found this link to have more detailed info on the differences between On-prem and Online for Enterprise versions
From the link http://www.microsoft.com/en-us/download/details.aspx?id=13602 download the file Microsoft SharePoint Online for Enterprises Service Description.docx. Appendix B contains the details.
Also, just noticed Managed Paths are not supported in Office 365 E1. I would really like a list that contains all features not supported. This is not listed in the above doc.
