here is nice video for installing SQL http://www.youtube.com/watch?v=-6D69P6O9AI
Basically you just need to be careful with Reporting Services configuration, you need to choose SharePoint Integrated Mode, if you plan to embed reports within your SharePoint.
Other BI futures (Power Pivot) are also installed from SQL 2012 media, you need to run install again and choose > SQL Power Pivot for SharePoint.
SSRS add-in can be installed separately or with PreRequisiteInstaller.exe (SharePoint media).
With SQL data tools you will get BIDS 2010 (VS with only DB programming functions available), which will cover your needs about database programming.

2. For BI futures, choose Enterprise http://sharepoint.microsoft.com/en-us/buy/pages/editions-comparison.aspx
3. Use VS 2010

according to MS, Windows 7 is an unsupported platform for the PowerPivot server components, but it can be done with some workarounds (I haven't used them jet) http://blog.datainspirations.com/2010/05/23/installing-powerpivot-for-sharepoint-on-windows-7/
If you have available both OS, I would rather set everything on Server, even if this means virtual machine, as you posted above.
