Hopefully this is just a simple brain stall caused by lack of sleep on a Friday.

    in ICE, I have

    ...

    Shell-Setup_amd64

    Shell-Setup_x86

    ...

Am I right in assuming that I can safely ignore all the _x86 things and only make changes to the _amd64 (or in the odd weird case, there is also _wow64)?

Indeed, why are the _x86 things even there, besides bloating my image to some ridiculous size... (read, I don't know enough to know which bits I can kill off to make it lighter.)

If you are building a 64 bit image, you use the _amd64 to setup the different settings.

    Thank you.

That begs the question, why are there _x86 settings at all.
