Enterprise Project Types – supporting a Project Management process that consists of 5 gateways à G1 – G5 – with a Schedule RAG status) can you please tell me what is gate ways (As per my understanding they are phases) and how to create RAG status for the phases?
one of these PDPs should be called “Update PDP” that includes the capture of 2 subjective status RAGs that calculate a third overall RAG – calculation is your choice. Can you please tell me how to do it?

You first have to tell us what you need! A RAG can indicate anything: time or cost over-runs, Quality status based on user input and more.
A getway is simply a point in the timescale of your project management process where quality checks, governance checks etc happen. For example after prototyping a risk gateway might be do we stop or continue based on prototype testing?
RAGs are often bsed on formulae, so what formulas do you have?

It appears you are using a Stage-Gate like process. The Phases that you refer to in Project Server, require a custom workflow to be used with your EPT. If you aren't using workflow, you can ignore the phases. In that case, you are managing the phase transitions manually.
Custom Fields are hosted on PDPs. A specific type of custom field, Project level Formula Custom Fields, are used to create these KPI type displays, assuming the need for a KPI is transactional in nature. Otherwise, for BI only needs, one of the six included BI tools in SharePoint Enterprise would better fit the need.
With workflow, you can control which PDPs appear at a given Phase/Stage, achieving your KPI appearance based on Phase. Without workflow, you can either show all KPIs or create a separate PDP for each Phase.
To set this up requires a number of steps, of which the list below is a part.
- Workflow or no workflow
- Determining and creating the formula
- Creating the Enterprise Custom Field
- Republishing the projects to populate the data
- Creating the requisite PDPs
- Editing the Project Fields web part on the PDP to show the formula custom field
- And so on...
Given this, which particular aspect do you need assistance? I think this entire process spans at least three chapters of a book I worked on.
