Outlook 2007 - Launch Macro based upon Category selection

Question

I only need to know if the following is possible:

1. User creates a new calendar event or meeting request
2. User selects a category, I.E. Catering
3. A specific 'Catering' macro launches, opens a window;which takes input, and then inserts the data into the event body.
4. Other macros that perform the same kind of operation would be required as well. All within the same event creation window. So, selecting multiple categories launch different input windows.

We would set this up as a custom form but we are deploying Microsoft CRM and cannot use custom forms with the CRM Outlook Add-in, per Microsoft Support.
